XAVIES' Granola breakfast with rhubarb raspberry compote

 

Who doesn't love raspberries! The first summer raspberries are hanging lusciously between the young leaves, simply mouthwatering! Rhubarb is also great in June! But the thought of fresh rhubarb doesn't immediately wet our palate now, does it? It rather makes us pucker, or make sour faces :)!

But nature actually already told us! Together, raspberries and rhubarb are at their best; not only are they ripe together, but they are also a delicious combo!

We made this delicious rhubarb-raspberry compote! The color alone is already gorgeous! And it tastes even better!

This compote is really tasty with your daily healthy breakfast! Gives extra flavor to the yogurt and fresh fruit! Don't have the time to cut your fruit in the morning? With this compote, some yogurt and granola, you also have a full, healthy breakfast. Aside from your portion of fruit, it already gives you some vegetables to start your day!

 

Ingredients Rhubarb raspberry compote

for one jar

3 stems of rhubarb

2 tablespoons of sugar

1 tsp vanilla extract

200 grams of raspberries

 

Rinse the rhubarb stems under running water. Cut off the underside of the stems. Cut the rhubarb into pieces of about 1 cm.

Put the rhubarb together with the sugar and the vanilla extract in a pan (you don't have to add water even if it looks like you should). Put the rhubarb on medium heat and let it simmer for about 10 minutes while stirring regularly with a wooden spatula. The rhubarb will become fibrous and start to fall apart.

Add the raspberries and let simmer for a few more minutes.

Spoon the rhubarb raspberry compote in a glass jar and store in the refrigerator.

You can keep this compote in a jar in the refrigerator for up to a week.

  

Ingredients for breakfast

 

Red fruits (strawberries, raspberries, blueberries, blackberries)

Plain yogurt

Rhubarb raspberry compote

XAVIES’ granola nuts-chocolate

Mint

 

Preparation

Divide the yogurt into the breakfast bowls.

Add the red fruits.

Sprinkle XAVIES' nut-chocolate granola over the yogurt and finish with the rhubarb raspberry compote and a mint leaf.
