This compote is really tasty with your daily healthy breakfast! Gives extra flavor to the yogurt and fresh fruit! Don't have the time to cut your fruit in the morning? With this compote, some yogurt and granola, you also have a full, healthy breakfast. Aside from your portion of fruit, it already gives you some vegetables to start your day!

You can keep this compote in a jar in the refrigerator for up to a week.

INGREDIENTS

3 stems of rhubarb

2 tablespoons of sugar

1 tsp vanilla extract

200 grams of raspberries

PREPARATION

Rinse the rhubarb stems under running water. Cut off the underside of the stems. Cut the rhubarb into pieces of about 1 cm.Put the rhubarb together with the sugar and the vanilla extract in a pan (you don't have to add water even if it looks like you should). Put the rhubarb on medium heat and let it simmer for about 10 minutes while stirring regularly with a wooden spatula. The rhubarb will become fibrous and start to fall apart. Add the raspberries and let simmer for a few more minutes.
